Hi Greg, yeah the tough part about going tip-free is that the look of the prices is shocking. Other restaurants have done it with fees and add-ons that disguise the final amount, but we felt that approach was insincere. We did the math based on what the prices were like in the before times and it works out the same in the end. Instead of having service charges and paying minimum wage, we pay about $28 an hour to most of the staff. This is equivalent to what they made with tips, but now there is no weirdness about uneven pay. It also reduces the paperwork and tax reports associated with tips. We knew it was going to look weird making this change, but we felt it was better to be upfront with the reality of the costs, than to be like the airlines with a bazillion tacked on fees.
